The pros and cons of ceramic coated pans

What does it mean if a pan has a ceramic coating?


Although ceramic coating sounds like it refers to a ceramic dish, this is not the case. The name comes from its enamel-like appearance. The interior surface of a ceramic pot or pan is coated with a natural, water- and oil-repellent layer that is applied over a metal or aluminium base.


This coating is made without PFAS compounds or heavy metals like lead and cadmium, making ceramic cookware a popular and more environmentally friendly alternative to traditional non-stick coatings.

The pros of a ceramic coating


1. Non-stick coating


A ceramic-coated pan is as easy to use as a Teflon pan and provides a non-stick surface without harmful chemicals. The ceramic coating reduces the need for grease and oil in cooking, as food does not stick to the pan as easily.


2. It's easy to clean


The ceramic coating is excellent at preventing food from sticking to the pan. For this reason, cleaning the pan is effortless. However, it is important to remember not to scrub the pan with a hard metal scrubber, as the coating can become scratched.


3. It's non-toxic


There are no PFAS chemicals in the ceramic coating, which means it is completely non-toxic. PFAS chemicals are known as dangerous "forever chemicals" that can cause various health issues. As the name suggests, these chemicals can never be removed from the Earth.

The cons of a ceramic coating


1. A ceramic coating is more sensitive than a Teflon coating


Because a ceramic coating doesn't have any hash metals or toxic chemicals, it is a bit more sensitive to changes in temperature compared to a Teflon coating. This however, does not mean that you couldn't use a ceramic coated pan for as long as a Teflon pan. With the correct care, a ceramic coated pan can last for up to 5 years. In order to have a long lasting pan, you have to remember to only use medium heat to not overheat the pan.


2. Coated pans are not intended for high-temperature frying.


If you are looking for a pan that you can use for frying steaks or cooking food that requires high temperatures, a coated pan is not the best choice. Coated pans are best kept at a maximum medium heat (especially on induction hobs, which heat up much faster and more intensely) and only used with wooden, plastic, or silicone spatulas. This applies to both ceramic-coated pans and Teflon pans.
