Vaahdotettu ricotta-paahtoleipä mansikoiden ja hunajan kera

Whipped ricotta breads topped with strawberries and honey

I went to the strawberry farm today to pick some deliciously sweet strawberries for these breads. I'm not much of a sweet tooth, so this is the perfect dessert/snack for me. It's also super easy to make at the beach or park and is the perfect reward after a whole morning of strawberry picking!

Whipped ricotta:

3 dl ricotta cheese, preferably homemade.
3 tablespoons of crème fraîche.
0,5 dl whipping cream
0,75 dl powdered sugar to taste.
1-2 teaspoons vanilla extract

Strawberries:

1,5 dl strawberries, cut into quarters.
2 tbsp powdered sugar
1/2 lemon juice
6 slices of rustic bread
2 tablespoons of honey, to drizzle over the top


Whisk the whipping cream till it is the right consistency. Whisk in the ricotta, crème fraîche, icing sugar to taste and vanilla extract in a bowl. Mix until completely smooth and creamy. Transfer to a piping bag fitted with a large round nozzle. Place in the refrigerator.

Combine the chopped strawberries, sugar and lemon juice in a medium mixing bowl and stir gently. Set aside and stir occasionally until the strawberries soften and some of the juice is released.

Meanwhile, toast the bread and let it cool.

When ready to serve, pour the whipped ricotta cream in large waves over the cooled, toasted bread. Spoon the strawberries over the ricotta and drizzle honey over the top.
