Summer flower cookies

Colourful and vibrant summer flower cookies! These cookies require only 3 ingredients and less than 10 minutes in the oven. They are topped with a 4-ingredient frosting, making them super easy to make on any summer day!

Recipe


2,5 dl of flour
115 g of butter
1,2 dl of powdered sugar


Measure out all three ingredients. Make sure that the butter is at room temperature and mix everything together. Roll into a ball and cover with plastic wrap and place in the fridge for min. 1 hour. After 1 hour, take it from the fridge and preheat your oven to 175 degrees. Let the dough be at room temperature for at least 20 minutes. Roll 7 smaller balls out of the dough. Place them on a oven tray. Place in the oven for 7 minutes. Take them out of the oven and with a plate, press them flat and put back in the oven for another 1-2 minutes. Once out of the oven, let them rest for 5 minutes and then with a cookie cutter, press on the flower shape. Let them cool down for 10 minutes and remove the leftover cookie from around the flower shape and place the flower cookies on a cooling rack.

Icing


25 g of butter (room temperature)
1 dl of powdered sugar (or as needed)
1 tbsp of milk
1 tsp of vanilla extract
1 tsp of food coloring (or as needed)
(Repeat for each color)


In a bowl, add the butter, powdered sugar and milk. Mix till combined with no clumps. Add the vanilla extract and the food coloring of your choice. Place all the colors into piping bags with a small round nozzle. One of the colors ( I used yellow) should be in a piping bag with a large round nozzle to decorate the center of the flower cookie.
