Kesäkurpitsa feta frittata

Frittata is wonderfully easy and filling! It's great for breakfast, lunch or even between bread, and can be eaten hot or cold - both are delicious!

I'm not a big fan of courgette, but it tasted really good here. So if there are others out there who aren't really into zucchini, give this a chance hehe!

ZUCCHINI FETA FRITTATA


For 4-6 people:
3 tsbp oil
2 big or 3 small zucchinis
2 garlic cloves crushed
2 juicy tomatoes
6 eggs
handful of dill, finely chopped
100 g feta cheese crumbled
sea salt
black pepper from mill


Add oil on a pan and heat up.

Grate the zucchinis, add salt and let them sweat. Add garlic cloves on the heated pan, add the zucchinis and fry for 5 minutes. Cut the tomatoes into small pieces and add on the pan.

Lightly whisk the eggs in a big bowl, season with dill and salt and pepper.
Add on the pan with the zucchinis and tomatoes and mix well.
Add the crumbled feta and cover with a lid.

Let cook on medium heat for 5 minutes or until the frittata is almost firm.
Serve warm or cooled down on bread, for example.
