Italian style lunch

At this time of year, many of us tend to long for a holiday in Italy. Since many of us won't be travelling to Italy this year, we decided to bring a piece of Italy to us with some delicious food and drinks!

LEMON RICOTTA PASTA



enough pasta for 4 servings (about 60 g per person).
250 g ricotta
250 g fresh spinach, washed.
100 g parmesan cheese
1 lemon juice
2 tbsp extra virgin olive oil (1 tbsp for frying and 1 tbsp for drizzling over the top).
1 clove of garlic, grated or pressed.
Basil
salt and black pepper to taste
1 lemon for garnish (slices).


Instructions
Start by boiling water in a large pot for the pasta. Meanwhile, make the ricotta mixture by adding the ricotta, chopped basil, parmesan, lemon juice, garlic, salt and pepper. Pour olive oil into the pan and fry the spinach until wilted. Add the ricotta mixture to the pan with the spinach (heat off). When the pasta is cooked, add it to the pan and stir everything together. Add a little more olive oil, lemon slices and basil.

MOZZARELLA WITH TOMATOES


2 mozzarella
2 tomatoes (we used Adora tomatoes)
1 clove of garlic
Olive oil
Basil
salt and pepper to taste


Instructions
Slice the tomatoes and place them on a small baking tray. Sprinkle with olive oil, sliced garlic, salt and pepper to taste. Bake in the oven at 150°C for 7-12 minutes. When you have removed the tomatoes from the oven, top with mozzarella and add more olive oil and basil. (You can also add salami if you wish.)

THE PERFECT REFRESHING SUMMER DRINK


For the ultimate refreshing drink, we decided to get a flavoured mineral water with lemon and blood orange flavours. We enjoyed them with ice and lemon slices. It was the perfect way to finish off this Italian lunch, which really made us feel like we were enjoying this food in the piazza of Rome or on the cliffs of Capri!
