HEIROL’s Homemade Limoncello

10 organic lemons (preferably unwaxed)
750 ml vodka (strong, unflavored, preferably at least 40% alcohol)
500 ml water
300–400 g sugar (to taste)

Wash the lemons thoroughly. Carefully peel only the yellow part of the lemon zest using a knife or peeler - avoid the white bitter pith. Place the lemon zest strips into a large, clean glass jar or bottle. Pour the vodka over the zest, seal tightly, and gently shake. Let it infuse in a cool, dark place for 7–10 days, gently shaking the jar once a day. The vodka will gradually take on a bright yellow color and absorb the lemon aromas.

After infusing, combine the water and sugar in a saucepan. Heat gently, stirring until the sugar dissolves completely. Let the syrup cool to room temperature. Strain out the lemon peels from the infused vodka using a fine sieve or cheesecloth. Mix the lemon-flavored vodka with the cooled sugar syrup. Pour the finished limoncello into clean bottles and seal.

For the best flavor, let the limoncello rest in the fridge or freezer for at least 4–7 days before serving
