3.5 dl all-purpose flour
1 tsp baking powder
1 tsp vanilla sugar
1/2 dl dark cocoa powder
200 g butter
2.5 dl brown sugar
3 eggs
1/2 dl milk
50 g gingerbread cookies, crumbled
Filling
1/2 dl vanilla cream cheese
12 pieces of chocolate
In a bowl, mix together the flour, baking powder, vanilla sugar, and cocoa powder. In a separate bowl, mix the room-temperature butter and sugar until light and fluffy. Add the eggs one at a time, beating well after each addition. Gradually add the milk and flour mixture to the batter in small portions, alternating between the two, and mix until smooth. Stir in the crumbled gingerbread cookies.
Fill each muffin cup halfway with batter. Place a small spoonful of cream cheese in each cup and add a piece of chocolate on top. Cover with the remaining batter.
Bake on the middle rack at 200°C for about 20–25 minutes, until the muffins are fully baked.
