Easter mocktail

Spring brings with it soft yellows and sunset oranges, and there's no better way to embrace these colors than with a refreshing mocktail that can be enjoyed at any time of day. This drink combines fresh citrus flavors with sweet homemade rosemary syrup, adding a delightful and unexpected twist.

Grapefruit-Rosemary Refresher


(1 mocktail)
2/3 dl fresh grapefruit juice
1 dl tonic water
2-4 cl rosemary syrup
Fresh lime juice
Grapefruit slices or rosemary sprigs
Ice


Pour rosemary syrup into a glass (2 cl if you prefer a less sweet mocktail, or 4 cl if you like a sweeter drink). Then add grapefruit juice, lime juice, and tonic water. Serve over ice and garnish with grapefruit slices or rosemary sprigs.


Tip: You can swap the tonic water for sparkling wine if you want to turn this into a cocktail!

Homemade Rosemary Syrup


2.5 dl water
2.5 dl sugar (or honey for a richer flavor)
3–4 fresh rosemary sprigs


Heat the water and sugar (or honey) in a saucepan over medium heat. Stir occasionally until the sugar is fully dissolved. Add the rosemary sprigs and reduce the heat to low. Let it simmer for about 5–10 minutes, depending on how strong you want the flavor. Remove from heat and let the syrup steep for another 15–20 minutes. Strain out the rosemary sprigs and pour the syrup into a clean glass jar or bottle. Store in the refrigerator and use within two weeks.


Now you have rosemary syrup that you can use in cocktails, lemonades, or even desserts!
