Delicious bruschetta

In summer, it's lovely to invite guests over and sit outside in the warm evening sun. The air is filled with laughter and conversation. I find it lovely to put together a little something to eat and I'm never anxious about surprise guests.

Last weekend, my husband Rolf's parents came over out of the blue, so I made a salad and sandwiches from what was in the fridge. Wine should always be cold and ready too, right?

Delicious Bruschetta


Cut the tomatoes into small pieces, add oil, salt and garlic in small pieces.
Allow to season while the oven heats up. Bake the breads in the oven at 200C for 2 min.
Remove the bread from the oven, add the tomato chunks and top with a bufala mozzarella. Bake in the oven for a few minutes, finish with a few basil leaves and balsamic vinegar
