Carrot banana bread

Spring is finally here! Even though the wait felt long, now we can enjoy all the delightful spring treats! This treat is perfect for spring celebrations and upcoming picnics. It’s quick to prepare and super easy to decorate, resulting in a beautiful spring bread!

Recipe


2 dl spelt flour
2 dl almond flour
1 tsp baking soda
1 tsp cinnamon
¾ tsp baking powder
¾ tsp salt
1/8 tsp nutmeg (optional)
2 overripe bananas (mashed)
1 dl finely grated carrot
1 dl maple syrup, honey, or agave
½ dl soy milk
½ dl coconut oil (melted)
2 tsp vanilla extract
Crushed nuts, shredded coconut, etc. (optional)

Frosting:
1.5 dl Greek yogurt
1.5 dl mascarpone
1 tbsp maple syrup

Edible flowers

Preheat the oven to 175°C. Grease a loaf pan or line it with parchment paper. In a bowl, mix the dry ingredients. You can add crushed nuts or shredded coconut if desired. In another bowl, mix the wet ingredients (including banana and carrot) and add the melted coconut oil. Pour the wet ingredients into the dry ingredients and mix until smooth. Pour the batter into the prepared loaf pan and smooth the surface. Bake in the middle of the oven for 45 minutes, or until a toothpick inserted in the center comes out mostly clean. Let it cool.


Prepare the frosting by mixing all the ingredients together, then spread it over the cooled loaf. Finish off with edible flowers and enjoy!
