Blueberry Mascarpone French Toasts

The dreamiest french toast, anyone?  Is there anything more comforting & cozy than French toast on weekend morning? Here’s a quick and delicious recipe for my Blueberry Cardamom French Toasts with a heavenly mascarpone topping.

Recipe


4 slices of bread (I use gluten-free)
2 organic free-range eggs
1 dl almond milk or organic whole milk
½ tsp cardamom
1 tsp cinnamon
butter for frying

Topping:
1 dl mascarpone
1 tbsp local organic honey
fresh blueberries


Instructions:
Whisk together eggs, milk, cardamom, and cinnamon. Dip the bread into the mixture, ensuring it’s well-coated, and fry in butter until golden. Mix mascarpone and honey until smooth, stir in the blueberries. Spread the topping on warm toasts and finish with an extra drizzle of honey and optional almond flakes.
