0.7 dl sugar
0.5 tsp vanilla sugar
2 dl milk
3.5 dl heavy cream
125 g egg yolks (about 6)
1 dl cane sugar for caramelizing


Pour the milk, cream, and vanilla sugar into a saucepan and bring to a boil. Whisk the sugar and egg yolks together, but do not foam them. Preheat the oven to 90°C. Once the cream and milk mixture is lukewarm, pour it over the sugar and egg yolk mixture, stirring thoroughly. Strain the Brusciata mixture into a jug and portion it into shallow ramekins, filling them about 3–4 cm deep. Bake in the oven in a water bath for about 45 minutes, then let cool. The custard is set when it has a jelly-like consistency when gently tapped. Sprinkle a thin layer of cane sugar over the surface of the custards and caramelize it using a kitchen torch. Be careful not to burn the sugar too dark. Serve immediately after caramelizing, as the crispy sugar layer will soften over time.
