We could go on an on about the hundreds of recipe's we've thought of making on this pan but we will stick to our favorites.
Here are our top 2 recipes:
Banana pancakes
1 banana
1 egg
2 heaping tablespoons of flour (we used buckwheat flour)
1/2 teaspoon baking powder
1 heaping tablespoon cottage cheese
A pinch of salt
1–2 pieces of dark chocolate, chopped into small pieces
Toppings:
Blueberries
Strawberries
Maple syrup
Mash the banana in a bowl with a fork. Add the egg and mix well. Stir in the buckwheat flour, baking powder, cottage cheese, and a pinch of salt. Mix until you have a smooth batter. Gently fold in the chopped dark chocolate.
Heat a frying pan over medium heat and cook the pancakes until golden brown on both sides. Serve with fresh blueberries and strawberries, and drizzle with maple syrup.
Blueberry ricotta pancakes
1 egg
1 dl of milk
2 dl of flour
1 teaspoon of baking powder
1,5 dl of ricotta
A pinch of salt
1 tbsp of maple syrup or agave syrup
A handful of blueberries (or more)
Mix all the ingredients together except for the blueberries and mix till you have a smooth batter (add more flour if the batter is too runny and more milk if it's too thick). Gently fold in the blueberries.
Heat a frying pan over medium heat and cook the pancakes until golden brown on both sides. Serve with your favorite toppings.
