Veggie Spaghetti with a Julienne Peeler

A friend of mine called me the other day and asked for easy and healthy veggie recipes.

I’m sharing this with you because my friend had never heard of my favorite kitchen gadget!

I use a Julienne Peeler almost daily, it helps me make thin, long slices of my veggies super easily.
Sometimes I just put the veggies in a salad, but when I’m in the mood for something warm, the veggies peeled with the Julienne Peeler go well with any wok dish!
Carrots, zucchini, sweet potatoes, etc. just have to be rinsed well, peeled if necessary (I try to avoid any additional peeling because I attempt to buy everything organic), placed on a cutting board, use your other hand to hold them still, and peel away. That’s it. Wonderful thing veggie strips in seconds. The spaghetti-like veggies look and taste delicious!

RECIPE


You can start off with basically any veggie you like, but zucchini is excellent for this. Apply light pressure and make long pulls to obtain those nice long, thin slices. Don’t slice the soft portion of the zucchini.
Put some oil/butter on the pan, then add the veggie spaghetti and stir them around on medium heat until warm and a bit soft.
Add some flavor with lemon peel and salt.

Serve as a healthy, delicious side for anything you want to pair it with!
