Spinny

This Spinny recipe takes the classic cinnamon roll to a whole new level, using a delicious overnight dough that's soft, airy, and easy to work with. Let the dough rise overnight, and enjoy incredibly moist and rich treats the next day.

Dough
Start by preparing the dough using our bun dough recipe! For this recipe, make half the dough portion. The dough needs to rise overnight, so be sure to prepare it the night before to bake these delicious treats the following day!


Filling
150 g room temperature butter
2.5 dl brown sugar
5 tbsp cinnamon


Roll the dough into a thin sheet. Spread the butter evenly over the dough with a pastry brush and sprinkle the brown sugar and cinnamon on top. Roll the dough tightly from the long side and pinch the seam securely. Cut the roll into about 3 cm slices and place them in a baking dish with the cut side up so the swirl is visible.


Cover the buns with a cloth and let them rise for at least 30 minutes.

Bake at 200°C for 20–25 minutes, depending on the size of the buns, until they are beautifully golden brown.

Icing
2 tbsp Philadelphia cream cheese
1–2 tsp lemon juice
300 g powdered sugar


Carefully combine all the icing ingredients. Gradually add the lemon juice and adjust the consistency—it should be pourable, but not too runny.


Once the buns have cooled, drizzle the icing over them. Follow the shape of the buns as you ice them to keep the beautiful "spinny" swirl visible.
