Shrove croissants

A couple of weeks ago, I started spotting beautiful shrove croissants in bakery windows and taking over everyone's Instagram feeds. I finally got to taste this delicious creation myself, and of course, I fell in love with its crispy crust and soft, creamy filling. What especially caught my attention was how beautifully the cream is always piped onto the croissant. It varies in shape and amount, making this treat not only incredibly tasty but also visually stunning. Last weekend, I finally tried making my own version at home with Gryn’s croissants. I picked them up from the bakery in the morning, then at home, I added a wonderfully smooth mascarpone whipped cream and, of course, some strawberry jam. Yum!

Mascarpone Whipped Cream


4 dl Whipping Cream
100 g Mascarpone
2 tsp Cardamom


Whisk the whipping cream until it's almost ready. Then add the mascarpone and cardamom, and continue whisking until the mixture thickens. Adding mascarpone makes the cream thicker, which enhances the shape of the piping even more! The hint of cardamom adds a lovely sweetness and brings in the traditional flavors of shrove buns.


Transfer the whipped cream into a piping bag and choose your preferred nozzle – for these croissants, an open star nozzle was used. Pipe the cream onto the cut croissant in your desired shape. Once the cream is piped, add a spoonful of strawberry jam and close the croissant. As a finishing touch, sift a little powdered sugar over the croissants!

Piping: Tips & Tricks


1. Remove any air bubbles before starting
Before you begin piping, make sure there are no air bubbles in the piping bag. Air pockets can cause uneven piping and messy splatters. Fill the bag slowly and squeeze out any excess air to ensure a smooth and even result.


2. Choose the right piping tip
The nozzle you use directly affects the final look. A tip that’s too small can make piping difficult, while an overly large one may spread the filling too much. Select the tip based on the style of decoration you want and make sure it fits securely in the piping bag.


3. Use the right technique
Hold the piping bag at a slight angle and apply steady, even pressure. This helps create a controlled and precise design. Avoid piping straight upwards, as it can lead to uneven shapes and inconsistent flow.


4. Don't squeeze too hard
A gentle, consistent pressure gives the best results. If you squeeze too hard, the filling may burst out unpredictably or lose its shape. Keep a relaxed grip and let the filling flow smoothly.


5. Check the consistency of your filling
The filling should have the right consistency: too runny, and it won’t hold its shape; too thick, and it might break the piping bag.
