“Delicious single sheet lasagne paired with seasonal veggie and parmesan cream!”
Recipe
Makes 2 portions
Fresh pasta (You can find the recipe from our inspiration page!)
100g asparagus
100g parmesan cheese
50g butter
1 tbsp flour
1/2 l milk
Pepper
Salt
Basil
Chilli oil
Instructions
Start by preparing the pasta dough. When the pasta dough is ready, start rolling it in the pasta machine until you reach setting “9” (the thinnest setting). Then place the pasta sheets on the table and cut them into two even sheets and sprinkle the chopped basil on one of the sheets. Then place the second sheet on top of the first and put it through the pasta machine on setting “8” ( the pasta sheets should be about 30-35 cm long). In the meantime, make the parmesan sauce. To make the parmesan sauce, put the butter in a pot. Once the butter has melted, add the flour and mix until you have a paste. Start adding the milk slowly and keep mixing to avoid lumps. When all the milk has been added, reduce the heat and add the parmesan cheese, salt, pepper and chopped fresh basil.
Put a large pot of water to boil for the pasta sheets and start frying the asparagus in a frying pan for 6-8 minutes. Once the water is boiling, add one pasta sheet at a time to the pan and cook for 2 minutes. Then you can start to assemble the lasagne on a plate in order; pasta sheet, parmesan cream and asparagus. You can fold the pasta sheet and do this 3 times on the same plate. Drizzle some chilli oil, parmesan cheese and basil leaves on top.
Happy cooking!
