Kinuskikissa's gingerbread brookies

Brookies are an incredible chocolaty innovation that combines two American classics: brownies and cookies. In this festive version, the cookie layer tastes like gingerbread dough. Both layers are baked to just the right level of al dente, leaving them soft with a slightly doughy texture.


The baking is done in our square silicone pan, which has a non-stick surface. The unique feature of this pan is its compact size, as it can be folded down before use. When assembled, the pan is sturdy and doesn't leak at all. This makes it easy to store, transport, or even freeze the baked goods! After use, the pan can be stored unfolded as a flat sheet, just a few millimeters thick. 

Recipe


Brownie dough
100 g butter
70 g of dark chocolate
1 3/4 dl sugar
1/4 tsp salt
1 1/2 eggs
1 3/4 dl wheat flour

Cookie dough
75 g butter
3/4 dl sugar
1/2 egg
3/4 tsp baking powder
2 tsp gingerbread spice
2 dl wheat flour
100 g white chocolate chips (or pieces)


Melt the butter in a saucepan. Remove from the heat and add the chocolate pieces to the melted butter. Stir until chocolate is melted. One by one, add sugar, salt, egg and flour. (Tip: you can halve the egg easily by first breaking and mixing it in a measuring container and then pouring only half of it into the sugar, salt and flour mixture. Remember to save the other half for the cookie dough.) Pour the dough into the pan. Pre-bake the base at 200 degrees for 10 minutes.


Beat butter and sugar until frothy. Stir in the egg. Add baking powder and gingerbread seasoning. Stir in the flour in a few batches and finally the chocolate pieces. (Save a small amount of chocolate pieces to put on the surface.) On top of the base, add the cookie dough in nugget-shaped pieces. There is no need to spread out the cookie dough. Continue baking for about 13 minutes. When done, press the rest of the chocolate pieces onto the surface. Let it cool and put it in the fridge until the brookie is completely cold. Cut into squares and enjoy!
