Kinuskikissa’s festive savoury pie

Recipe


Crust
75 g cheese (e.g., Gouda or Emmental)
5 dl all-purpose flour
175 g butter
1/2 dl cold water

Filling
140 g cheese (e.g. gouda or emmental)
1 small leek
1 small red bell pepper
200 g smoked ham
1 dl sun-dried tomatoes, diced
2 dl flavored cooking cream (e.g. three onion)
120 g sour cream
3 large eggs
1/2 tsp black pepper

Topping
garden cress and/or baby arugula
cucumber
radishes
cherry tomatoes
small red onion flowers


Crust

Grate the cheese for both the crust and filling into fine shreds. Combine the grated cheese and flour, and rub together with the butter. Finally add the water. Grease the base of a 25 cm Heirol quiche pan. Press the dough onto the base and sides (height 4 cm). Cut strips of baking paper and press them against the sides of the dough. This way the edges won’t collapse during pre-baking. Pre-bake the crust at 200°C for about 13 minutes. Remove the paper strips


Filling

Chop the leek and dice the bell pepper. Soften the vegetables by sautéing briefly in oil. Dice the ham and sun-dried tomatoes. Combine cooking cream, sour cream, and eggs. Mix in the rest of the filling ingredients. Pour the filling into the crust.


Baking

Bake at 200°C for about 50 minutes. You can shield the top with a baking tray on a higher rack once it’s nicely browned.Let it cool. Remove the silicone ring from the pan. Serve on the glass platter of the quiche pan by just removing the sides.


Topping

Decorate the pie with fresh herbs, cucumber and radish slices, cherry tomatoes, halved red onion, and edible flowers. If using flowers not from the vegetable section, wrap the stems in foil before inserting into the pie.
