Kale salad with a lemon garlic sauce

This fresh kale salad with lemon garlic dressing is the perfect side for summer meals. Crunchy almond slices and salty Parmesan add texture and flavor to the salad, while the bright lemon juice and aromatic garlic make the dressing delicious and vibrant.

200 g of Kale
50 g of sliced almonds
the juice of 1 lemon
1,5 dl of olive oil
2 garlic cloves, roughly crushed
50 g of parmesan cheese, grated
salt
pepper
 

Start by preparing the dressing: mix fresh lemon juice, olive oil, crushed garlic cloves, and a pinch of salt in a small bowl or jar. Let this sit for at least one hour to allow the garlic to infuse themixture with its flavor.


Meanwhile, wash the kale thoroughly and remove the tough stems. Chop the leaves into bite-sized pieces and place them in a large bowl. Add the grated Parmesan cheese.


In a dry pan over medium heat, toast the almond slices until they’re golden and fragrant. Add them to the kale and cheese.


Once the dressing has infused, remove the garliccloves and pour the dressing over the salad. Using your hands, gently massage the dressing into the kale for a minute or two, ensuring every leaf is well coated - this helps to tenderize the kale and deepen the flavor.


Serve within an hour of preparing to prevent the salad from becoming soggy. Enjoy fresh!
