Tasty Green Falafels

A more fitting name for these would be “Green Veggie Patties, but it just doesn’t have a nice ring to it, and these things look a lot like falafels! This dish is fresh, crunchy, and healthy fast-food. All you have to do is mix all the ingredients in a blender, shape the balls as you want, and put them in the oven. These things go with almost anything, but if you’re looking for a light, nutrient-filled lunch, I’d serve them with a fresh salad! If you love the taste, make a larger batch and take them with you on a picnic or take some with you to your friend’s place!

If you are one of those people that think you need to soak chickpeas overnight, you are correct! If you are one of those people that just suddenly crave falafels (like me), use canned chickpeas and if you don’t want to monitor hot oil in a pot, put the chickpeas in the oven!

Below you will find the recipe for the latter, the easier way.

RECIPE


400g of canned chickpeas, well rinsed
1 bag (100-120g) of frozen peas
100g of broccoli
2 leaves of kale, without the hard middle part
1 yellow onion, chopped
1 clove of garlic
½ chili without seeds
2 tbsp of chia seeds
2 ts of chopped cumin
A large chunk of parsley leaves
A few mint leaves
1 ts of baking soda
Salt
Pepper


Preheat the oven to 220 °C.
Put all the ingredients in a blender, blend well, and give the mix a taste.
Take a full tablespoon of the dough and shape into a small patty – or however you like
Apply some olive oil on top
Place onto a baking tray that’s covered with a baking sheet
Bake for about 20 minutes, re-apply some olive oil on top and bake for another 10-15 minutes, or until the surface looks crispy.
The patties will last a few days when stored in the fridge.

Serve the falafels with salad, avocado, and some bruschetta bread. Toast the bread on both sides on a pan, grill, or a toaster, until you get beautiful stripes on the surface.
Split the garlic clove and massage/spread it onto the bread, give it a splash of olive oil, and sprinkle some salt on top.
