Fresh porridge

In Italy, breakfast, colazione, is essentially a quick espresso and cornetto, a sweet-filled butter horn, taken from a neighbour's bar. After all, they are absolutely wonderful flavours and I really enjoyed them when I was there!

Back home in Finland, breakfast is more leisurely, on these dark mornings I sit by candlelight and enjoy Finnish berries and some lovely smooth porridge made with oats or soya! The easy part is that I make it the night before and in the morning I just add some berries or fruit! I put the Bialetti moka coffee maker on the stove and let the best smell of the morning, espresso coffee, wake up Rolf - with a smile on his face in the morning!

If you want to make more porridge to take to work, put in a glass jar.

Fresh porridge


One portion:
Measure into a bowl/glass jar the night before:
1 dl oatmeal (I prefer large oatmeal)
1 dl soy or oat drink (or whatever you like).
1 dl unflavoured soy or oat yoghurt (or whatever you like).
1 tablespoon of chia seeds
1 tbsp date syrup / honey / maple syrup / coconut syrup
Mix well and cover tightly, refrigerate overnight

In another bowl, I put the berries in the fridge to thaw overnight.
In the morning, take out the porridge bowl and add the melted berries.
Cut slices of banana, garnish with coconut flakes and drop in a few walnuts.
