Easy sorbet recipe to cool you off!

Nothing tastes as good on a hot summer day as a refreshing sorbet (except maybe a tall glass of cold water with lemon). Making sorbet is super easy so you don’t need much, you can surely make it at the summer cottage as well! You don’t need to use specific ingredients – you can use any berries and fruits, fresh or frozen!

The basic composition of a sorbet comes from water and sugar. You can add 2 beaten egg whites into the mix before placing it in the freezer, but I took a shortcut (yet again) and didn’t do it. I also left out the sugar and replaced it with maple syrup. The amount of sugar affects the end result; the less sugar you use, the more crystal-like and grainier the texture.

I used fresh berries (raspberry, blueberry, strawberry), but the rhubarb was in the freezer overnight. 

SUMMER DAY SORBET


1 dl water (or coconut milk)
berries and fruit based on your own preference and availability
1-2 tbs lemon juice
1 tsp vanilla extract
1 dl sugar or a splash of maple syrup


Pour the water or coconut milk into a blender. Add the berries and let the mix blend for a minute or two. Squeeze in 1-2 tbs of lemon juice, add the vanilla extract, sugar, or maple syrup, and blend for a few seconds. Do a taste test to check the flavor and sweetness. By adding a couple of bits of frozen beets you can really bring some color to your sorbet!

When you are happy with the flavor and color, pour the mix into a dish that can be put in the freezer, and let it sit there overnight. To get a nice and even result, stir the mix a bit once during its time in the freezer. Take the sorbet out of the freezer a few minutes before serving it and decorate with fresh flowers.

Psst! I replaced the water with coconut water and everyone loved it, so I’ll put it in here as an option for you as well!
