Recipe
(serves 2)
1 tbsp oil
Salt
1 avocado
1 tbsp chili-garlic oil (or your favorite spiced oil or seasoning sauce)
A handful of fresh herbs like flat-leaf parsley and basil, chopped
Lightly oil the pan and heat it on the stove. Crack the eggs directly into the hot pan and cook until the whites are set but the yolks are still runny. Season generously with salt.
Top with avocado slices, a drizzle of chili-garlic oil, and a big handful of fresh herbs. You can also use up any leftovers from the day before, like grilled vegetables, for extra flavor.
