Christmas gingerbread biscuits

Traditional Christmas cookies are lovely and full of different Christmas flavours. Personally, I also like these slightly lighter gingerbreads with a healthy hint of ginger. These gingerbreads are quick to make and the dough is available in the same way as traditional gingerbread dough.

CHRISTMAS GINGERBREAD BISCUITS


You will need:
200 g butter
150 g of sugar
2 eggs
1 teaspoon vanilla extract
1 teaspoon ginger powder
330 g flour
1 teaspoon of baking soda

Powdered sugar for decoration

Preheat the oven to 180 C. Whisk the butter and sugar until fluffy. Add the eggs one by one and mix until smooth. Mix together the flour, vanilla extract and ginger powder. Add to the dough and mix well. Divide the dough into two parts and refrigerate for 15 minutes.Roll out the dough between two sheets of baking paper to a 3 mm thick disk.Cut out cookies with a cookie cutter of your choice and place on a baking sheet lined with baking paper. Bake for about 8 minutes. Decorate the cooled cookies with icing sugar.
