How to choose the right frying pan?

One of the most important and often the most expensive kitchen tool is a good frying pan. This is why we think it is important to do some research on them before buying one.

How do you recognize a proper pan?


The most important characteristics of a good frying pan are; versatility, a thick base, a sturdy frame/structure, and a durable frying surface. The handle is a matter of opinion, but you definitely want one that fits your hand well.



A high-quality frying pan has a thick base and a frame made of durable materials. A thick base allows the heat to spread evenly, retains heat better, and a sturdy structure prevents the pan from bending even at high temperatures.



When comparing pans made of similar materials, for example, steel pans, oftentimes, the heavier the better. A heavier steel pan has a thicker base and frame, meaning it’s more durable and retains heat better. But remember, weight is not a good parameter for comparing pans made of different materials – cast iron, carbon steel, aluminum, and steel have very different weights.


Two will do


You’ll be wise to have at least two good frying pans in your kitchen, for different kinds of cooking. A good rule of thumb is to have one pan that can handle higher temperatures, so you can sear and sautee properly, and a coated pan for general use.
